Pumpkin Bread

Do you have memories of certain foods your family would cook around the holidays that just always made you feel like it truly was the holiday season? This Pumpkin Bread is it for me!! Smelling it baking always takes me back to my childhood and my mom making it.

When I was growing up, I remember I would be so excited when my mom would start making pumpkin bread. It has always been one of my favorite treats! I would always ask her to make sure and save some for me and not give it all as gifts. 

When I had to go gluten free, this was something I was really upset about not being able to make and eat anymore. I had to find a way to make it so I didnโ€™t miss out. 

This recipe is absolutely amazing. The texture and taste are perfect and you would never know itโ€™s gluten or dairy free. 

Ingredients: 

-1 cup canned pure pumpkin 

-2 eggs 

-1/3 cup water 

-1 teaspoon vanillaย 

-1/2 cup oil 

-1 cup light brown sugar lightly packed  

-1/2 cup white sugar 

-1 3/4 cup 1:1 gluten free flour blend (I recommend King Arthur or Bobโ€™s Red Mill brand) 

-3/4 teaspoon salt

-1 teaspoon soda

-1 teaspoon cinnamon 

-1/4 teaspoon cloves

-1/4 teaspoon nutmeg 

Instructions 

  1. Preheat your oven to 350 degrees and grease loaf pan
  2. Mix pumpkin, eggs, water, vanilla, and oil 
  3. Add in sugar to wet ingredients and mix 
  4. Add in flour, salt, soda, cinnamon, cloves, and nutmeg 
  5. Mix all ingredients well 
  6. Pour into greased loaf pan and bake for 1 hour  

Notes

-if you donโ€™t like cloves or nutmeg, you can leave that out 

-you can use all brown sugar, all white sugar, or a mixture of the two to get your 1 1/2 cups of sugar 

-loaf pans will need to bake around an hour, but start checking it at 45 minutes as everyoneโ€™s ovens are a little different 

-if you use a muffin pan, they will need less time to bake, so start checking them at 20 minutesย 

-if you want to make this even more of a treat, cream cheese icing or glaze goes perfectly with this pumpkin breadย ๐Ÿ™‚

-this recipe can also be made using regular wheat flour if you donโ€™t need it to be gluten free
