
This gluten and dairy free chocolate chip banana bread is such a treat!! It is the perfect way to use your overripe bananas! 🙂
Ingredients
-1 stick softened dairy free butter (I used Country Crock Plant Butter)
-1 cup granulated sugar
-2 to 3 overripe bananas
-2 eggs room temperature
-2 cups 1-1 gluten free flour (I recommend King Arthur or Bob’s Red Mill brands)
-1 teaspoon baking soda
-pinch of salt
-1 teaspoon vanilla
-1 cup dairy free semi sweet chocolate chips (I like the Enjoy Life brand)
Instructions
-Preheat oven to 350 degrees Fahrenheit.
-Coat a loaf pan in oil or line with parchment paper.
-Prepare a stand mixer or bowl and hand mixer.
-Cream butter and sugar.
-Add bananas and mix well.
-Add eggs and mix.
-Add flour, baking soda, and salt. Mix until just combined.
-Add vanilla and mix well.
-Add in chocolate chips and fold in with a spatula.
-Pour into prepared pan and top with a few more chocolate chips if desired.
-Let batter rest for about 10 minutes.
-Bake for about an hour. Check at 45 minutes.
Notes
-This can be made with regular butter, flour, or chocolate chips if you don’t need it to be gluten or dairy free.
-You can leave out the chocolate chips, add chopped pecans, or use peanut butter chips instead. It’s versatile so do what you like best. 🙂
-You can sub brown sugar for the granulated white sugar or do a mixture of both to get to your 1 cup.
-I have used both King Arthur and Bob’s Red Mill 1-1 gluten free flour when making this and they are both great, but I do think the King Arthur brand is a little better.
-You could put this in muffin tins instead of a loaf pan. Your baking time would be less, so I would recommend checking them at about 20 minutes to see if they are done or if they need longer.
