Chunky Monkey Baked Oatmeal

If you need a breakfast or snack idea, this baked oatmeal is so good and a healthier option! I love any combination of chocolate and peanut butter. Throw in some bananas and it makes it extra delicious!

Ingredients

-2 to 3 large bananas mashed

-2 eggs

-1 cup of milk of choice (I prefer almond milk for this recipe)

-3 tablespoons pure maple syrup

-1 teaspoon vanilla extract

-2 1/4 cups gluten free old fashioned rolled oats (Bob’s Red Mill brand is my favorite)

-1 teaspoon baking powder

-1/2 teaspoon salt

-1/2 cup chocolate chips (I recommend semi sweet or dark chocolate) plus 1-2 tablespoons for topping

-1/4 cup natural drippy peanut butter

Instructions

  1. Preheat oven to 350 degrees Fahrenheit.
  2. Grease or line an 8×8 inch pan with parchment paper.
  3. Add mashed bananas to large bowl.
  4. Whisk in eggs, milk, maple syrup, and vanilla.
  5. Add oats, baking powder, and salt. Mix to combine.
  6. Add cup chocolate chips and mix.
  7. Pour into prepared pan and bake for about 35 minutes or until golden brown on top.
  8. Remove from oven, drizzle the top with peanut butter, and add extra chocolate chips.
  9. Let cool slightly before slicing and serving. Store any leftovers in an airtight container in the fridge for 3-4 days.
  10. Enjoy!! It is amazing!

Notes

-It is best to use very ripe or overripe bananas for this.

-This is a very versatile recipe. You can add mix ins or toppings like blueberries, strawberries, coconut, etc. You can also leave out the chocolate or add about 1/3 cup peanut butter to the batter.

-This is better warm, so heat up your leftovers.

-This can easily be dairy free by using non dairy milk and dairy free chocolate chips.
