
If you need a breakfast or snack idea, this baked oatmeal is so good and a healthier option! I love any combination of chocolate and peanut butter. Throw in some bananas and it makes it extra delicious!
Ingredients
-2 to 3 large bananas mashed
-2 eggs
-1 cup of milk of choice (I prefer almond milk for this recipe)
-3 tablespoons pure maple syrup
-1 teaspoon vanilla extract
-2 1/4 cups gluten free old fashioned rolled oats (Bob’s Red Mill brand is my favorite)
-1 teaspoon baking powder
-1/2 teaspoon salt
-1/2 cup chocolate chips (I recommend semi sweet or dark chocolate) plus 1-2 tablespoons for topping
-1/4 cup natural drippy peanut butter
Instructions
- Preheat oven to 350 degrees Fahrenheit.
- Grease or line an 8×8 inch pan with parchment paper.
- Add mashed bananas to large bowl.
- Whisk in eggs, milk, maple syrup, and vanilla.
- Add oats, baking powder, and salt. Mix to combine.
- Add cup chocolate chips and mix.
- Pour into prepared pan and bake for about 35 minutes or until golden brown on top.
- Remove from oven, drizzle the top with peanut butter, and add extra chocolate chips.
- Let cool slightly before slicing and serving. Store any leftovers in an airtight container in the fridge for 3-4 days.

Notes
-It is best to use very ripe or overripe bananas for this.
-This is a very versatile recipe. You can add mix ins or toppings like blueberries, strawberries, coconut, etc. You can also leave out the chocolate or add about 1/3 cup peanut butter to the batter.
-This is better warm, so heat up your leftovers.
-This can easily be dairy free by using non dairy milk and dairy free chocolate chips.
