
We are a cookie cake loving family! This is a super easy, semi-homemade funfetti cookie cake recipe that uses a cake mix. There are only four ingredients in the cookie part of this recipe-one box of cake mix, light oil, eggs, and white chocolate chips. It is very fun to make and would be an awesome birthday dessert!! My three year old loves to help with this. The homemade buttercream really adds to the deliciousness of this recipe!
I really love this Pillsbury Funfetti cake mix, but you can use a different brand if you have something else you prefer.

Ingredients
For the cookie cake:
-1 box gluten free cake mix
-2/3 cup light oil
-2 eggs
-3/4 cup white chocolate chips
For the icing:
-1/2 stick (4 tablespoons) salted butter, softened
-1 teaspoon vanilla extract
-2 to 2 1/2 cups powdered sugar
-1-2 tablespoons of milk if needed
-Few drops of regular or dye free food coloring
Instructions
For the cookie cake:
- Preheat oven to 350 degrees Fahrenheit.
- Grease an 8 inch round cake pan.
- Add cake mix, oil, and eggs to bowl and mix with a stand mixer or by hand until combined.
- Gently fold in white chocolate chips.
- Press dough down into pan in an even layer.
- Bake for about 30 minutes.
- Remove from oven and let cool completely.
For the buttercream icing:
- Using a stand or hand mixer, cream the butter and vanilla.
- Slowly add in powdered sugar until mixed well.
- Add in food coloring if using.
- Add milk or more powdered sugar as needed/preferred.
- Ice your completely cooled cookie cake as you like. Add extra sprinkles if desired.
- Enjoy!!!
Notes
-You can use whatever light oil you like. I usually use extra light olive oil. You can also use butter in the place of oil, but you would probably need to use a little more than 2/3 cup.
-This can be made with or without the white chocolate chips. You could also use milk, semisweet, or dark chocolate chips.
-This would also be good without the icing if you aren’t a fan of buttercream.

I buttered my pan and then pressed the dough down in there.
