Peanut Butter Banana Bread Muffins 

At our house, we either go through bananas very quickly or they don’t get eaten and then they’re brown and mushy. Then comes the banana bread! 🙂 I like to find new twists to a classic banana bread just to change it up some. This peanut butter banana bread muffin is moist and delicious! You would never know it’s gluten free. 

It makes a perfect breakfast treat or midafternoon snack!

Ingredients 

-1 cup creamy peanut butter, plus 1/4 cup more for drizzling 

-1/2 cup (1 stick) unsalted butter, softened 

-1/2 cup white granulated sugar 

-1/2 cup light brown sugar, packed 

-2 to 3 bananas, overripe 

-1 egg 

-1 teaspoon vanilla 

-1 3/4 cups 1:1 gluten free flour (I used King Arthur brand) 

-1/2 teaspoon baking powder

-1/2 teaspoon baking soda 

-1/4 teaspoon salt 

Instructions 

  1. Preheat oven to 350 degrees Fahrenheit and prepare two muffin pans with liners or grease. 
  2. Using a stand mixer or hand mixer, cream together peanut butter, butter, granulated sugar, and brown sugar until fluffy. 
  3. Add mashed bananas, egg, and vanilla. Mix until combined. 
  4. In a separate bowl, add gluten free flour, baking powder, baking soda, and salt. Whisk to combine. 
  5. Slowly add dry ingredient mixture to wet ingredients. Mix until just combined. 
  6. Let batter rest for 10 minutes. 
  7. Scoop batter into muffin pans filling about half full. This should make 18-24 standard size muffins depending on how full you want to fill them. 
  8. Bake for about 15-18 minutes. 
  9. Remove from oven and let cool completely. 
  10. Drizzle with peanut butter and enjoy!!

Notes

-This can be made dairy free by using a plant based butter. 

-Feel free to add some mix ins like chocolate chips. 

-You can use regular wheat flour with this if you don’t need it to be gluten free. 

-You can use all white granulated sugar or brown sugar (or any combination of the two) to get the 1 cup of sugar needed.
