Fried Yellow Summer Squash 

If you are in the Tennessee area and have a garden that is planted with yellow summer squash, you are probably overflowing with them right about now! I know I am! 

I have been making this fried squash very frequently the last few weeks and I wanted to share how I do it!! It’s super easy and so delicious. This has always been a summer delicacy to me! 

I have a hard time not eating all of it while I am cooking it. It hardly ever makes it to the supper table. It ends up being our appetizer. Ha 

Don’t let the word “fried” trick you. It’s not terribly unhealthy the way I do it! I do a light cornbread breading and fry it in light olive oil. 

I do use a gluten free cornbread mix for this. It is easy and this is the best one I have found. No one ever knows it’s gluten free. It’s Bob’s Red Mill brand. Here is a picture of the bag for reference.

This is a “recipe” but I’m not really going to give you exact measurements because it depends entirely on how much squash you want to fry. 

Here are the steps:

-Slice squash into thin rounds. I like to do mine super thin so it doesn’t take long to fry and is very crisp. 

-Put squash rounds in a large bowl and add cornbread mix. Mix until all squash slices are coated in the cornbread mixture. You may have to do this in batches depending how big your bowl is to get all pieces coated well. 

-Put a large frying pan on your stove over medium/high heat. 

-Pour your olive oil (or other kind if you prefer-vegetable oil would work too) to about 1/2 inch deep in the bottom of your pan. Let oil get hot-it needs to bubble/sizzle when you put something in. Around 350 degrees Fahrenheit if you have a food thermometer to check it. 

-Place breaded squash rounds into hot oil. Let fry on one side for a minute and then flip to the other. You need to stay with this and watch it as it can fry super quick and you don’t want to burn it.

-Once fried, remove from pan and place on a paper towel covered plate to let drain. Serve immediately as they are best hot. 

Notes: 

-Sometimes I will add a little salt to the cornbread mix.

-I will also sometimes add garlic or onion powder to the mix to give it a little more flavor. This is personal preference and totally up to you what you want!
